1 can shoepeg corn, drained
1 can black-eyed peas, drained
2-3 tomatoes, seeded and chopped
1-2 avocados, chunky
1/2 cup chopped cilantro
1 cup of Italian dressing
Prepare a few hours ahead to allow flavors to blend together. Refrigerate. Serve with big scoop Fritos or corn chips.
